It has an intense flavour and rich texture, given by the open field cultivation of tomatoes during the month of April, which are then harvested by hand during the months of July and August and processed entirely in an artisanal and fresh way. It is processed with care and dedication, following all the steps required by Apulian tradition and respecting the ancient recipe that has been handed down for generations: a warranty of quality and taste. "La Rustica" tomato sauce has a genuine and authentic taste. Thanks to its dense and compact consistency, it is very versatile when cooking and guarantees perfect adherence to the pasta. For the production of "La Rustica" tomato sauce, cherry tomatoes are processed according to an artisanal method and processed within six hours from the harvest.
"La Rustica" tomato sauce, as well as all other I Contadini products, is produced using the technique of integrated production in the open fields. Freshness means quality and this is what the company wants to guarantee with its artisanal manufacturing. The tomatoes are picked by hand, where only the best vegetables are selected and then cleaned. Then they are dried in the sun, as the local tradition wants, on a small plateau of the farm exposed to the wind coming from the Ionian Sea. This is why these tomatoes have a truly unique flavour, rich in the scents of Salento. During this process, the tomatoes are salted by hand. The sun-drying process preserves all the organoleptic properties of the product and the proteins, minerals and vitamins it is rich in. Finally, the cherry tomatoes are blanched, then mashed until they reach their ideal consistency and finally potted in glass jars. The puree is seasoned exclusively with fresh basil without any added salt. In this way, we obtain a product with an authentic taste with 99% tomato and 1% fresh basil.
