Taralli with Extra Virgin Olive Oil by Terre di Puglia are traditional oven-baked taralli from Apulia. They have a very tasty flavour thanks to the artisanal processing and the addition of 100% Italian extra virgin olive oil from Apulia.

They come in an elegant box, perfect to have always with you in your kitchen or for a tasty and traditional gift. Taralli are a very characteristic snack of the gastronomy of Apulia. They are very crunchy and are shaped like a small ring. They are traditionally made with a dough of flour, extra virgin olive oil and white wine. The classic recipe is often adjusted by the producers, who add some special spice or aroma to enrich the flavour. Their unique and characteristic taste, in addition to the use of natural and quality ingredients, is given by the oven-baking process which, according to the traditional recipe, follows a short boiling phase. This step allows the taralli to acquire greater crunchiness once baked.

The etymology of the word “tarallo” has several interpretations and the exact origin of the name of this product is quite uncertain. Nevertheless, there are several theories and legends about it. Some claim that the name comes from the Latin “torrere”, meaning to roast. Others believe it is the result of combining the Italian word “tar” with the French word “danal”, which refers to a rolled-up bread, typical of areas beyond the Alps. Other studies claim that the word “tarallo” has French origins, referring to the term “toral” (dryer), while other sources link it to the Greek term “daratos” used to indicate baked goods similar to taralli.

Historical notes

Like its name, the historical origins of taralli are full of different stories. According to the most common legend, taralli date back to the 1400s from simple necessity which, like so many stories of traditional recipes, gave rise to one of the most iconic products of Italian gastronomy. The story goes that a woman, having nothing to give her children to eat, decided to combine the only ingredients she had in her pantry to prepare something for them. She made a mixture of flour, salt, oil and white wine, divided it into two thin strips and twisted them into a ring. After that, she decided to let the dough rest and bake it in the oven.

Processing

Traditional Apulian taralli are made in just a few simple steps. The first step is to select genuine, quality ingredients. Once all the ingredients have been mixed together and the dough has an elastic texture, sticks (about 8 cm long by 1 cm in diameter) are formed. Then, by overlapping the two ends, you will form a ring. At this point, they are cooked twice: first they are boiled in hot water and oil until they rise to the surface and then baked in the oven for about half an hour.
