Lean Pancetta Coppata is a typical seasoned raw cold cut widespread mainly in Emilia-Romagna, Lombardy and Veneto.
It is one of the tastiest products in the vast range of Italian cured meats. It stands out for the fact that it combines two Italian pork products: pancetta and coppa. The combination of these two cured meats gives rise to an elegant and truly particular product with a taste in perfect balance between the delicate notes of the coppa and the more pronounced ones of the pancetta. The Lean Pancetta Coppata has several alternating layers of a red-pink lean part and an ivory white fat part. In appearance it is a cold cut very similar to pancetta but with slightly wider and more visible white veins.
This cold cut is excellent when tasted in its pure form, finely sliced and accompanied by a slice of bread. Excellent to enrich a platter of cured meats, such as pork bresaola, cooked ham and salami gran filetto, and cheeses such as aged pecorino, caciocavallo and smoked provola, all accompanied by chestnut honey and fig jam. Lean Pancetta Coppata is a perfect ingredient to prepare delicious sandwiches or wraps, we recommend combining it with a seasoned cheese together with another ingredient with a more delicate and sweet flavor such as pear, artichoke cream or broad beans. Furthermore, it is an excellent product to embellish baked recipes such as potato gâteau, baked pasta or a savory pie.
Processing
The peculiarity of this cold cut lies in its ingredients and preparation. This requires that the pork belly is initially skinned and defatted, then tanned with salt, pepper and other spices. Next, the bacon is rolled around the coppa, wrapped with white paper and tied. Finally the product passes to the curing phase which will last at least 45 days.
Curiosity
Lean Pancetta Coppata, among the variants of pancetta, is the one with a more recent origin. In fact, it derives from the evolution of the classic butchery that wanted to create a leaner product while preserving the unmistakable taste of pancetta.
