The Pecorino aged in straw and hay is a sheep’s milk cheese matured in straw and hay, in accordance with Tuscan dairy tradition. It is, in fact, a typical Tuscan cheese that is matured wrapped in hay, a process that enriches it with natural aromas, and in straw, which improves its maturation. Characterized by its rounded shape, this pecorino has an artisanal history dating back decades. Its production can be traced back to Tuscan artisans who used straw and hay to store their cheeses on a daily basis. Farmers aged their cheeses in straw and hay in response to the need to preserve surplus cheese production over time. This technique protected the cheeses from insects and even mould and fungus. Although these preservation techniques are no longer necessary today, this custom is still carried on because it gives the cheese an intense and unmistakable aroma and taste. It also gives the cheese a soft texture because the leaves retain more humidity.

This pecorino has a straw-yellow colour, a strong aroma and a rich flavour. Specifically, you can recognise the scent of straw in the parts closest to the rind and its aroma is reminiscent of the hay being mown in June. The rind of this cheese is not edible.

This cheese is made from 100% Italian sheep’s milk. It is excellent paired with jams and honey or cut into thin flakes to accompany mixed salads, meat carpaccio or baked pasta. Cut into thicker pieces, it is perfect for making a tasty sandwich with, for example, porchetta, honey and walnut cream. Don’t miss the combination with mixed cold cuts such as prosciutto crudo, coppa or salame felino for an aperitif with a glass of red wine from the Val d’ Orcia.
