The Italian starter is a selection of three traditional Italian cold cuts, sliced and packaged in three practical trays in modified atmosphere to preserve all their best organoleptic qualities. It’s the perfect way to get quality cured meats in no time and combine them with other Italian deli products to make a tasty, complete starter.


We have chosen a trio of cured meats that are in perfect harmony with each other in terms of flavours and fragrances, to have the perfect stock in the fridge for every occasion and to satisfy even the most demanding palates.


The three cold cuts chosen are made from 100% Italian pork, processed according to tradition with the addition of spices and aromas characteristic of each specific cured meat.


Each 120 gram tray contains a trio of: Italian Cured Ham, Felino PGI Salami and Coppa di Parma PGI, sliced just thick enough to ensure the best possible taste experience.


Cured Ham


Cured Ham is one of the most traditional and well-known Italian cured meat products. It is made from the thighs of Italian pigs, called heavy pigs with a weight ranging from about 150 kg to 180 kg. Cured Ham is an uncooked, unbagged cured meat. The selected thighs are salted and massaged manually very carefully to ensure that the salt is absorbed into the meat uniformly. Afterwards, they are washed, air-dried and hung, then cured for several months at a maximum temperature of 15 degrees. During this phase the “sugnatura” takes place, i.e. the parts of the thighs without the rind are sprinkled with “sugna”, a mixture of ingredients composed of pork fat, salt, pepper and possibly other ingredients chosen by the individual producer. This phase helps to prevent the meat from drying out excessively during aging.


Felino PGI Salami


Felino PGI Salami is a cured meat from the town of Felino, in the province of Parma, and is produced in very few other neighbouring areas, such as Langhirano and Sala Baganza. This salami is produced with 100% Italian meat from heavy pigs. Salt, pepper, garlic and white wine are added to the meat, following the indications of the Consortium for the Protection of Felino PGI Salami.
Felino PGI Salami is the most popular product in Emilian appetizers, accompanied by other traditional cold cuts and local cheeses such as squacquerone and PDO Reggiano Parmesan cheese together with the typical torta fritta (fried bread).
The slices of this salami are characterised by a ruby-red colour and a limited amount of fat. Its flavour is sweet and delicate.


Coppa di Parma PGI


Coppa di Parma PGI is produced in the areas of Emilia Romagna and Lombardy, specifically in the provinces of Mantua, Modena, Parma, Pavia, Reggio Emilia and in the municipalities of the provinces of Cremona, Lodi and Milan. It is a traditional Italian cured meat with very ancient origins that seem to date back to the 17th century. It is produced in accordance with the specifications of the Consortium for the Protection of Coppa di Parma PGI. The entire cured meat has a typical cylindrical shape and the slices are compact and characterised by a predominantly lean red part and fine white fat veins. Coppa di Parma PGI has a delicate and slightly savoury taste.
