Processing

Then, it is baked in the oven at a constant temperature that gives the Baked Porchetta an intoxicating flavour and a typical aroma. Thanks to the delicate and very slow cooking process, the meat remains tender and juicy on the inside and crispy on the outside: a perfect mix of textures. The typically aromatic taste is achieved through the mix of spices used to flavour the meat, which is carefully massaged to allow the aromas to penetrate deeply and soften the meat. After being processed in full compliance with the recipe, the meat undergoes the binding process, which makes Baked Bacon remain firm both before and after cooking.
