Savory baci di dama with Cott cooked ham

For the baci di dama

Start by working on the halves that will make the Baci di Dama (each of them consists in two halves, and a filling in between).

In a bowl, mix together 45 g of Parmesan cheese and 45 g of chopped pistachios.

Mix them well, in order to have a quite homogeneous mix.

Do the same thing with chopped walnuts.

Now pour the mix in the silicone mold, and put it in the microwave at full power for about 1 minute (what is essential is for the Parmesan cheese to melt).

Remove the mold from the microwave, let it cool for few seconds and then take the Baci di Dama halves from the mold.

For the cooked ham mousse

With a blender, mix the Cooked Ham and herbs flavored cream cheese; if the mixture is too dry, add a bit of olive oil.

For the gorgonzola cheese mousse

With a blender, mix gorgonzola cheese and mascarpone.

To finish

You can now make your savory pastries: use the cooked ham mousse as the filling between two pistachio halves, and the gorgonzola cheese mouse as the filling between two walnut halves.
