Grass – lard, infusion and chocolate

For the Chocolate

In a saucepan, bring the heavy cream to a boiling, remove from heat and add chocolate. Place in a plate and let it cool.

Cut in 2 cm cubes, and wrap them with lard.

For the infusion

Bring water to 80°C and add the aromas.

Let it all sit for 1 hour, covered with wrap.

Filter and warm it up.

To finish

Place the Grass – Lard on the ice with the cocoa fava beans and the infusion on the side.


  • 8 grass - lardo slices
    For the chocolate
  • 100 g cream
  • 150 g 70% dark chocolate
    For the infusion
  • 100 ml water
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 star anise
  • 2 g cloves
  • 5 g cinnamon
