Culatello rolls with cheese and chives

For the rolls

Combine caprino cheese, cream cheese, olive oil and pepper: mix everything together to get a smooth and creamy mixture.

Chop the chives thinly and add it to the mix.

Lay the slices of culatello on your work surface.

Pour the mixture in a sac a poche and, through that, lay a line of cheese mixture on each slice of culatello.

Roll each slice up.

To finish

Take one string of chive and wrap it around the roll.

Make a little knot and place it on the plate.

Place two cherry tomatoes on a spoon full of caprino cheese at the side of the place, and a bit of rocket salad with some cherry tomatoes cut in halves to decorate.
