For the bread cube
Dip the bread cube in broth, drain it and slightly dry it.
Roast it on all sides in a pan with oil.
For the sauce
Boil milk, add corn flour, remove from heat and add the pecorino cheese. Blend and filter. Add salt to taste.
For the salami paste
Roast the S alami paste, add the veal juice and keep it warm.
To finish
Place the sauce in the middle of the plate, then over it the salami paste, bread cube, pecorino cheese, litchis and, finally, the grated pecorino with the bread puff pastry.
Pour the broth in separate glass.
