Raw ham, melon sorbet, and pink pepper

Method

For the melon sorbet

Dice the melon and freeze the cubes.

Prepare the sugar syrup by putting sugar and water into a saucepan; boil until the sugar dissolves well.

Turn off the heat and let it cool. Put into the fridge.

Take the melon from the freezer; blend together the melon cubes, lemon juice and sugar syrup until you get a homogenous mixture.

Place the mixture into a container suitable to go in the freezer. Every half an hour, mix it, until it is completely frozen.

Take it out of the freezer, blend it again with a blender, and serve it.

To finish

Serve the melon sorbet in glasses.

Law two slices of Prosciutto Crudo per serving, and decorate it with pink pepper, to enhance the flavor.

  • Raw ham: 200g
  • 1 melon
  • 1/2 cup of water
  • 1/2 half cup of sugar
  • Half lemon juice
