Method

For the Cotechino

Cook the Cotechino following the instructions on the package.

Cut Cotechino into 4 portions. Keep it warm.

For the squash

Season the squash with salt and chili pepper. Keep it warm.

To finish

Place the squash in the center of the plates, with beluga lentils seasoned with oil, salt, and lime zest; then add Cotechino, and finally the squash cones.
