Method

Cut the beef tongue into thin slices and put it in a non-stick pan for a few seconds and let it rest.

For the tartare, reduce the tomatoes into small cubes, add the aromatic herbs and the chopped olives and shallot.

Arrange the dish with the tongue accompanied by the tomato tartare and season with oil, salt and pepper.
