Wash the zucchini and cut it longways in order to have three slices 1/2 cm thick.
In the meantime, heat up the griddle, and when it reaches the right temperature, lay the zucchini slices on it.
Once they are properly grilled, let them marinate in oil, vinegar, salt and pepper for at least 1 hour.
Cut the croissant in half. Spread the stracciatella di bufala on one half, add the zucchini on it, and at last the Cooked Ham.
Serve warm.
