It is in these same lands where the products SALUMI PASINI are created. “We strongly believe in this project because we can count on a very high quality production developed in our family from generation to generation to this day” – says Filippo Pasini, head of the company’s production process. An offer of excellent products, launched on the market in an extremely appealing way. “The skills acquired outside of the field, in addition to a modern aesthetic sense deriving directly from our youth, allows us to make the best out of our products” – says Daniela Pasini, youngest member of this family team and responsible for the brand image.

Witnessing the great quality characterizing the new brand is the collaboration with Michelin-starred chef Davide Oldani resulting in the line SALUMI PASINI – FOO’D. A range of products where the craftsmanship handed down through generations by the Pasini family are enriched by new elements suggested by the chef. “It is with great pleasure that I work with a team so young and dynamic and with whom I share many of the values at the basis of my experience, most notably the combination of Tradition and Innovation. A collaboration that has allowed me to revisit some of the specialties of the iconic Italian culinary tradition: the cold cuts “says Davide Oldani. The sensory research of the great starred chef together with the Pasini family led to the elaboration of products such as DRISS the salami, GRASS the lard, SCHISC the bresaola and COTT the cooked ham. Products which already in their names, in Milanese dialect, give away their origin in the Lombard region and also at the same time hold the style and content of the POP cuisine of Davide Oldani.

SALUMI PASINI
SALUMI PASINI is a trademark of Smapp S.p.a., present on the Italian market with fresh and seasoned sausages for over 60 years. The brand is an idea of the new generation of the Pasini family aiming to introduce their products to the general public, not only in Italy, but internationally. The brand offers a line of six products: Country Salami, Pic Nic Salamis, Battened Bacon, Bacon, Pork Rind and Zampone. Salumi Pasini has its operational headquarters in Trezzano sul Naviglio, in the province of Milan. All its lines are produced exclusively in Italy using only carefully selected meats.
DAVIDE OLDANI
Davide Oldani, creator of the Cucina POP, which is characterized by the combination of high quality and accessibility, opened his restaurant in 2003: the D’O, in Cornaredo, in the province of Milan, in his home country. After a year, the most influential restaurant guides have include him among the great chefs of Italian cuisine. Previous experiences had seen him alongside great chefs like Gualtiero Marchesi, Albert Roux, Alain Ducasse, Pierre Hermé. In May 2014, the Davide Oldani Café opened in the new Piazza del Lusso at the Milan Malpensa Airport, a commercial gallery, which will house the largest worldwide luxury brands.
He worked as a chef also on TV, leading from September to November 2013 the first edition of the talent show “The Chef” on La5, renewed the following year and also broadcasted on Channel 5. He has published several books: Cuoco andata e ritorno (2008), La mia cucina pop, L’arte di caramellare i sogni (2009), Pop. La nuova grande cucina italiana (2010), Il giusto e il gusto (2012), Storie di sport e cucina (2013), Chefacile (2013). He also works for fourteen years with the monthly La Cucina Italiana and writes weekly for Sport Week a column of pop cuisine and sports.
His career as a designer emerged from the daily observation of the guests. Objects such as tables, chairs, dishes, cutlery and glasses reinterpreted according to the principles of his pop cuisine: simplicity, functionality and elegance.
Among the most important awards, a Michelin star and the Ambrogino d’Oro in 2008 by the City of Milan. In 2013, the Harvard Business School Review recognizes the originality of his business model, applicable not only to restaurants. Davide Oldani is then invited to talk about his personal experience at the headquarters of the prestigious American university. In March 2015 he’s going to give a lecture at the HEC University of Business in Paris.
He has been named Brand Ambassador for Milan EXPO 2015, the Universal Exposition dealing with the nutrition problem of mankind and planet Earth, and poses itself as a moment of dialogue among the leaders of the international community on humanity’s major challenges.
