Oven cooked Coppa is a special kind of roasted cured meat in the Italian gastronomy: only few producers carry on this tradition.
It is produced from the same selection of meat used for the more famous cured Coppa; in particular, from the upper portion of the pork neck. The pigs used to produce oven-baked Coppa are born and bred exclusively in Italy.
This cured meat is pinkish in colour with fat veins. Ovan Cooked Coppa is a product with an extremely delicate flavour. The delicateness and balance are the characteristics that make this cured meat unique. The slow steaming that it undergoes releases the flavours and fragrances that give pleasure at the moment of tasting. The flavour is not the only strong point of oven cooked Coppa; in fact, it also has an extremely delicate aroma from which the typical officinal herb of the cured meat can be perceived: rosemary. The combination of cooked Coppa and the oven is perfect, it gives it a graceful and delicate final note of flavored meat.
Oven baked Coppa is extremely versatile, so it is suitable for a variety of recipes, both hot and cold. Whichever way you decide to serve it, it won’t disappoint you. You can also simply cut it into thin slices and enjoy it as an aperitif, accompanying it with bread or folding it in two with soft cheese inside, rolling it and then frying it. If, on the other hand, you prefer it thickly sliced, Oven cooked Coppa is perfect for grilling, pan-frying or barbecuing. Processing
The cuts of meat selected for the production of the oven cooked coppa are flavoured with natural aromas and spices. It is then steamed in the oven for over sixteen hours. After being left to cool, it is vacuum-packed to best preserve the organoleptic properties of the product.
Wine pairing
To enhance the flavour of the oven cooked Coppa we recommend accompanying it with a Garda Classico Chiaretto DOC wine. This is a cherry rosé wine, dry, fresh and with an almond aftertaste. A wine that does not overpower the flavour of this delicate salami and enhances its authentic flavours.
