Method

For the Salami paste

Season the Salami paste with the extra virgin olive oil.

For the egg yolk

Boil orange juice with salt and sugar, pour the mixture into semispherical molds and freeze.

Frost the semispheres with citrus juice and agar-agar powder.

To finish

Place the Salami paste in the center of the plate with the egg yolk, salads, white wine sauce and capers.

  • 300 g salami paste
  • 3 g extra virgin olive oil
  • 2 lime zest
For the egg yolk
  • 100 ml orange juice
  • 2 g salt
  • 1 g sugar
  • 5 g agar agar in powder
To finish
  • 5 g crunchy capers
  • 20 g radicchio leaves
