Method

For the Piglet

Roast the piglet in a pan with just a little bit of extra virgin olive oil.

For the powders

Blend all the vegetables together.

Add salt to taste.

To finish

Place the powders on the plate, then maple syrup, truffle and roasted parsnips.

  • 10 g extra virgin olive oil

  • 40 g dried purple carrots
  • 20 g dried carrots
  • 50 g dry green celery
  • 2 g fine salt
To finish
  • 15 g black truffle
  • 70 g roasted parsnip
  • 30 g maple syrup
