Salami with Himalayan Pink Salt is a cured salami made from 100% Italian pork meat. Salami is one of the most traditional products of Italian cuisine. It is present in all regions and produced with different types of meat, such as beef, donkey or wild boar, and a selection of spices that changes depending on the tradition.

Salami with Himalayan pink salt is produced using only the finest cuts of pork: the shoulder, which composes the lean, red part of the salami, and the so-called “pancettone”, which composes the white parts.

The meat is combined with a balanced amount of pepper, selected flavourings and Himalayan pink salt. The latter has special mineral properties that are not present in ordinary white salt.

This salt is extracted from headlands that are 300km from the giant South Asian mountain range, namely the Himalayas. Specifically, it is extracted from the pristine Kewra mines in Pakistan, which are the most important salt mines in the world. 

Himalayan salt is characterised by its rich colour shades that go from pinkish white to pink to dark orange. In addition to its properties, this salt has become very famous because it is normally unrefined and is harvested and processed solely by hand without the help of machinery or chemicals. This process ensures the preservation of its mineral richness and its properties. 

Processing

For the preparation of Salami with Himalayan pink salt, we choose the best 100% Italian pork meat and carry out all the production steps in our company following an artisanal process.

Once the meats are chosen, they are trimmed and ground in order to obtain a coarse grain. To the mince, pepper, chosen spices, Himalayan pink salt and a mix of natural flavourings that are part of our company’s secret recipe are added. Then the mixture is placed in a natural casing that gives it its typical shape. At this point, our expert artisans tie every salami by hand with a string and then take it to the drying room where they will remain for a few days for the water to be removed.

Salami with Himalayan pink salt is then cured for several weeks inside wood-lined salt rooms with a 70-years-long history, to give each individual product a unique aroma and taste.
