Taleggio P.D.O. is a typical Italian cheese which, according to the Disciplinary, can only be produced and matured in some Italian provinces in Lombardy, Piedmont and Veneto from Italian cow’s milk coming only from these specific provinces. Originally this cheese was called stracchino, from the word “strac” meaning “tired”, to recall the tiredness of the cows returning from the mountain pastures, and it is at the beginning of the twentieth century that the cheesemakers of Val Taleggio, in the mountains of Bergamo, decided to give it the name that still distinguishes it today. The production of this cheese came about due to the need to preserve the milk produced by the cows for longer. It is a soft, uniform and compact cheese, produced from whole, raw or pasteurised cow’s milk. The production of Taleggio begins with the coagulation of the milk (raw or pasteurised) followed by the breaking and extraction of the curd. This is followed by the stewing process, which can last from 8 to 16 hours, during which the cheese is branded, in accordance with the regulations. Finally, the last two steps are salting and maturing for a minimum of 35 days in a cold and humid environment. It is characterised by a sweet, slightly aromatic flavour, has good digestibility and is rich in mineral salts, proteins and high energy. The rind is edible due to the fact that it is made exclusively with salt and water. It is an excellent cheese to enjoy on its own and suitable for many types of recipes or uses in the kitchen due to its meltability. Try it to add flavour to main courses, such as risotto, or with polenta. It is also excellent at the end of a meal, accompanied by fruit such as apples, figs and pears. It should be kept in its paper wrapper, which allows the passage of air until consumption, as it is a “live” cheese and continues to mature for some time
