Sant’Angelo Cooked Ham is a niche variant of one of the best-known cured meats of the Italian gastronomic tradition. It is a unique Cooked Ham made exclusively with the best Italian pork from selected breeding farms.

Our Sant’Angelo Cooked Ham is known for its very high quality and incomparable taste achieved thanks to the careful pork selection and the processing carried out following a very old recipe developed by the founder of the company himself Angelo Pasini and passed on to the family for decades to the present day.

The main feature that makes this Ham so special is the tying process completely carried out by hand according to an ancient craftsmanship technique still in use in our company to give the right firmness to the final product and provide unique texture and taste. Right after cutting, it releases a fragrant and pleasant scent in which the citrus notes stand out also due to the high-quality spices used for processing. When tasted, Sant’Angelo Cooked Ham reveals the same aromas, showing good taste-olfactory persistence.

We recommend cutting it into thin slices to fully appreciate the characteristics of this product. Sant'Angelo Cooked Ham is a real gem of local charcuterie, excellent to eat on its own or as a filling for a sandwich. Thanks to its delicate aroma, it is perfect to prepare numerous traditional dishes such as potato gâteau, enriched with Sweet Provola cheese and a generous sprinkle of Parmigiano Reggiano DOP that will form a succulent crispy topping. This excellent Cooked ham will enrich even a simple charcuterie board.
The wine to pair with this cured meat is Ribolla Gialla DOC, a fresh, lively and balanced wine, perfect for releasing all its distinctive notes. A real delight for the palate thanks to the explosion of flavours released from the very first bite.

PROCESSING STEPS

Processing is what really distinguishes Sant'Angelo Cooked Ham from the other ones that can be found in the panorama of Italian gastronomic culture. In fact, the very old company recipe still used today includes:
- the careful selection of spices and aromas;
- the 72-hour-long slow massage of the meat to make it tender and allow the spices to penetrate deeply to achieve the right aroma and taste.
- the traditional hand-tying to give it its typical shape
- the slow steam cooking process during which the ham is cooked at 70° for about 18 hours.
