Foglie di Noce Cheese is a pecorino cheese seasoned in walnut leaves, typical of the province of Siena, in particular of the municipality of Montefollonico.

The particular seasoning that characterises this product is a technique that dates back in time. Shepherds used walnut leaves to wrap the sheep’s cheese in absence of refrigerators, so they could protect the cheese from external agents and slow down dehydration. In particular, this could extend the shelf life of the product, which would then mature later.

Nowadays, this technique is used to give the product special essences and flavours; more precisely, the cheese, after an initial maturing, is left to mature between layers of walnut leaves. The rind is characterised by a scent of freshly shelled walnuts. The cheese has a characteristic flavour of mature cheese.

This cheese is made from 100% Italian sheep’s milk and has a firm, straw-coloured paste. Excellent for grating to add flavour to sauces, soups or stews. Cut into thin slices, it pairs very well with mixed salads, meat carpaccio or butter and sage ravioli. Combine it with mixed sliced meats such as pork bresaola, country salami or prosciutto crudo for an aperitif with a glass of Val d’Orcia red wine.

The product is delivered vacuum-packed and wrapped with twine, also suitable for gift-giving
