Method

For the Rib

Eye Steak Grill the steak on both sides, in a pan with extra virgin olive oil.

For the bread

Brown the bread with salt and butter in a pan.

Add squid ink and lemon zest. Blend.

To finish

Place the steak coated in black breadcrumbs, add the tarragon sauce and trout caviar.

  • 100 g grated bread
  • 15 g butter
  • 3 g cuttlefish ink
  • 1 lemon zest
  • 2 g salt
To finish
  • 100 g tarragon sauce
  • 50 g trout caviar
