Method

For the rice

Blend the rice, spread it on a baking sheet and let it dry out.

Fry in seed oil at 170°c. Drain and allow to dry.

Add salt to taste.

For the beans

Blend the beans with water, add salt to taste.

For the red wine

Bring to a boil the red wine, add corn flour.

Add salt and sugar to taste.

To finish

Place the rice in the middle of the plate with salt, dried chickpeas and slices of Driss Salami.

For the rice
  • 150 g Carnaroli rice cooked for 25 minutes
  • 1 l seeds oil
For the beans
  • 200 g cooked beans
  • 100 g water
  • Salt
For the red wine
  • 100 g reduced red wine
  • 2 g sugar
  • 1 g cornstarch diluted in cold water
To finish
  • 10 g dried chickpeas
  • 200 g thin slices of Driss salami
