For Grass lard
Place the lard in a bowl and melt it by setting the bowl on top of a pot of boiling water, for at least one hour. Filter and recover the melted and clarified fat. Place it on a plate and let it cool.
For the apple
Cut the apple into thin slices, add the sugar and lemon juice. Cook it in a vacuum bag at 80°C for 30 minutes. Drain, blend and sieve.
Place the apple sauce on the Grass then the cocoa beans, the flowers and finally serve with hot bread.
