Method

For the rice

In a casserole, toast the rise, add boiling salted water and cook for 15 minutes.

Remove from heat and keep it warm, with butter, Grana, salt and white wine vinegar.

For Cott – Cooked Ham

Powder Place the slices of Cott – Cooked Ham between two sheets of paper towels; cook in the microwave for one minute.

Let it dry and belnd.

To finish

Place the rice in the center of the plates, then the Cott – Cooked Ham powder, the topinambur zest, and finally the frozen spheres of taleggio cheese.

  • 320 g seasoned carnaroli rice
  • 10 g butter
  • 40 g grated parmesan cheese
  • 2 g fine salt
  • 5 g white wine vinegar
For Cott cooked ham powder
  • 100 g Cott cooked ham
To finish
  • 50 g Puffed topinambur peel
  • 100 g frozen taleggio balls
